Creamy Tuscan Chicken


I’ve been on a cooking frenzy so this blog might start looking like a food blog soon.

I’m not much of a pasta eater if I am honest because it tends to put me into a food coma and sends me right off to sleep. However, if I am going to get knocked out, then I want it to be because of this pasta. I did actually fall asleep right after eating this by the way. I dozed off on the sofa but I regret NOTHING. It just tastes too good.

Sure it has cream in it, but YOLO.


Serves: 6

Ingredients
3 chicken breasts chopped into bite size pieces
2 tomatoes diced
3 large handfuls of spinach chopped
200ml double cream
375g pasta
2 tbsp olive oil
1 vegetable stock cube
1tsp garlic granules
1tsp mixed Italian spice
½ tsp chili powder
Salt to taste

Method

1. Heat your olive oil in a large pan on medium heat and add your chicken. Once your chicken has started to turn brown add your tomatoes. Place a lid on your pan and leave it to cook for 5 – 8 minutes.

2. Mix in your garlic granules, mixed Italian spice, chili powder and salt. Leave it to cook for a further 5 minutes.

3. Meanwhile boil your pasta in another pan.

4. Add your vegetable stock cube and spinach to your chicken and mix in. Place a lid on the pan and cook for a further 10 – 15 minutes or until the chicken is fully cooked.

5. Mix in your double cream and allow it to cook for a further 2 minutes before taking it off the heat.

6. Drain your pasta, add it to your chicken and mix it in.
