
I love guacamole, who doesn't? It can be eaten as a dip, on nachos, with eggs in the morning or simple on some crunchy toast.
The best thing is, it’s super easy to make. I use a mini food processor to make mine which means I can make guacamole in about 5 minutes flat. To be honest I use my mini food processor for almost everything I cook because who has time to chop things? And onions make me cry. It's all very tragic.

Ingredients
½ a large red onion
1 Avocado
1 lemon juiced
Method
1. Peel and roughly dice the avocado and place it in a bowl and mash with a fork.

2. Finely dice the onion and add it to the avocado mash.
3. Add the lemon juice to the mixture and give it a final mix.
While I usually make my guacamole using a mini food processor, if you prefer it chunkier then doing it by hand is best.
