Nutella Rolo Brownies



I've been teasing a lot of people with pictures of these brownies. I only share pictures mind you, it's not like I would actually share any of these brownies (don't be silly). My sister has demanded I make them for her when I visit, that and a whole array of food she has been spotting on my Instagram. She messages me straight away when she finds something she fancies saying "I'll have some of that". 

These brownies are beyond yummy, stuffed with Nutella and gooey melted Rolos. They smell like fresh baked cookies and are the best dessert you could have when served with vanilla ice cream (unfortunately I don't have a picture of that because lovely husband moves in on a vanilla ice-cream dessert faster than you can say, "but I haven't put the chocolate sprinkles on it yet...") but you can use your imagination guys. Dirty food thoughts are encouraged here - don't be shy.


Serves: 9 brownies (big enough to give you a sugar coma but small enough to avoid the "I ate too much sugar and I feel sick now" stage)

Ingredients:

90g salted butter melted
290g muscovado sugar
250g plain flour
2 eggs
1tsp vanilla extract
1/4 tsp baking powder
20 Rolos cut in half (that's two packets of regular Rolos)
90g Nutella chocolate spread




Method:

1. Preheat your oven to 170 degrees Celsius. Butter and flour your baking tray. I have used a 21x21x4 cm dish but as you can see from the above picture you don't need your dish to be that deep. A depth of 2cm will do fine. Equally, if you use a slightly smaller dish you will just end up with fatter brownies. More brownie to love I say. 

2. Mix together your melted butter, sugar, eggs and vanilla extract. 

3. Add in your flour and baking powder and combine. You should have a thick batter at this stage.

4. spread half of your brownie mixture into the bottom of your baking tray. 

5. Spread the Nutella over the batter to make a nice thick layer of Nutella (this is what dreams are made of). The best way to avoid the Nutella from mixing with the batter is to take a large amount of Nutella and spread is roughly. 

3. Sprinkle your halved Rolos on top of the Nutella layer. Keep a few pieces back to sprinkle on top.

4. Spread the second half of the brownie batter on top of the Nutella and Rolo layer. 

5. Finally, take the remaining Rolos and sprinkle them on top. Push them into the batter. 

6. Pop your brownies into the oven and bake for 20 - 30 minutes. When you insert a knife into the brownies it should come out clean with some moist crumbs.
