Garlic and Cherry Tomato Scrambled Eggs

Hey guys. With all my recent brunching adventures I thought it was time to bring my café adventures home with me and give them to you. Plus, I've accepted that the weather is taking a turn for the worse and when it's raining I just don't want to leave my cosy flat - coz, I'm lazy and cold.

Lovely husband seems to have given up completely, he's only daring to venture from bed for food supplies and then quietly and discreetly retreated back for the rest of the day.

I'm sat next to my balcony doors in my armchair watching the rain in a massive jumper as I write this. But it's getting me into that cosy mood, the one which says - watch this space for warming home food recipes.

Eggs are my go to for breakfast when I've got a busy day. It keeps me full and stops me from naughty snacking. But it can get boring so I'm always looking for new flavours. So here is some eggspiration (yeh that was lame, but give a girl a break).

This is a really simple and tasty recipe and can even be made in the morning on a weekday (if you are organised enough to get up for breakfast - I don't know these people).

🍴   Serves: 1
⏰ Prep Time: 10 minutes
🍳 Cook Time: 10 minutes
⏳  Total Time: 20 minutes

🌱 Dietary Information: low-sugar

1 tsp butter
2 Cloves of garlic finely diced
2 Eggs
7 Cherry tomatoes roughly sliced
20 ml Milk
Salt to taste
2 Toasts
1/2 Avocado


1. Melt the butter in a pan and add the garlic. Lightly brown on medium heat.  

2. In a separate bowl whip together your eggs, milk, salt and tomatoes. 

3. Pour the egg mixture into the pan with your browned garlic and periodically stir with a fork to scramble the eggs.   

4. Serve with toasted bread and half a sliced avocado. 

Don't forget the coffee. Coffee is very important.
