Chinese Chicken and Sesame Zoodles

I can't believe it's 2019 already. Time has really flown by. But I'm excited about the year ahead and about continuing with this blog. Sharing all my recipe ideas with you guys has been a really creative experience from me, everything from the food photography to being able to talk to you guys, wherever you are in the world!

And I'm determined this is the year that I shift myself onto eating more veg and less sugar - all part of my master plan to feel more energetic, healthy, have healthy organs and age gracefully. Let's see how this goes...

This recipe is at least starting off on the right foot. It's a great healthy meal but it's also incredibly tasty! You know me - I'm not willing to compromise on good food. I really believe you have to enjoy the healthy food you eat otherwise you simply won't!

The best inventions always happen by accident. This recipe is one of them. Well, perhaps less accident and more sheer laziness. After a long day and a gym session I wanted to rustle up something quick (I just wanted to lie down!), that was also stuffed full of vegetable (I was having a major vegetable craving after all the junk food and sugar I've had over the past month!) and ended up coming up with this chicken and sesame zoodle recipe.

As soon as Faiz walked into the flat the smell hit him and he polished off whatever was left in the pan!

This recipe is packed with flavour even though it's SO simple and quick. It's instantly become a favourite of mine for busy weeknights. So, here's the recipe!

Chinese Chicken and Sesame Zoodles Recipe

🍴   Serves: 4
⏰ Prep Time: 10 minutes
🍳 Cook Time: 20 minutes
⏳  Total Time: 30 minutes

🌱 Dietary Information: Low-carb, low-fat, gluten-free, dairy-free

6 courgettes
8tbs sesame oil
4 cloves garlic finely diced
2 chicken breasts thinly sliced
2 red peppers diced
10tbs soya sauce
2tsp chilli flakes
sprinkle of sesame seeds

1. Slice off the top and bottom of your courgettes and using a julienne peeler, peel your courgettes lengthways to make your zoodles and put to one side. You can also use a spiralizer to do this.

2. Heat 3tbs of sesame oil in a large wok or frying pan.

3. Keeping the pan on high heat add the garlic and fry until light brown.

4. Add the chicken and stirfry until it's half cooked then add your peppers and zoodles. Cook, occasionally tossing, until the zoodles and peppers soften.

5. Finally, add the soya sauce, chilli flakes, and the remaining 5tbs of sesame oil and toss your zoodle stirfry to combine.

Serve with a sprinkle of sesame seeds.
