Grilled Curried Lamb Chops with Mint Yogurt


This recipe pretty much cooks itself which is why it's one of my favourites mid-week go-tos.

I love these lamb chops. It took me some time to get the recipe right so that the chops came out soft and juicy and these definitely do! Straight after these pictures were taken the whole thing was polished off. 

Equally, this recipe makes a seriously impressive dinner party dish and it's so simple to make that you can't go wrong.



You can pop all the ingredients into one big bowl which means minimum washing (which is always a win, I love to cook, I hate to clean up after myself). 

I often come home, pop the chops in the oven (it only takes 10 minutes to prep) and then just have half an hour to myself, unwinding, while my flat fills up with the smell of all the delicious spices. 


The chops are packed with flavour so you can easily keep it healthy with a side of steamed vegetables.



Grilled Lamb Chops with Mint Yogurt Recipe

Ingredients
1kg Lamb chops (roughly 16 chops)
300g yogurt
2 tsp cumin powder heaped
2 tsp curry powder heaped
1 tsp garlic and ginger paste
1/2 tsp chilli powder
1 lemon juiced
1 handful coriander leaves chopped

Mint Yogurt:
200g natural yogurt
1 handful mint leaves finely chopped
1/2 lime juiced

Method

1. Preheat the over to 200℃.

2. In a large bowl combine together the yoghurt, coriander leaves, garlic and ginger paste, cumin, chilli and curry powder and also the juice of one lemon.

3. Pour half of the yogurt mixture into a large roasting tray and spread evenly to cover the tray. Place the lamb chops on top coating one side in the yoghurt marinade. Pour the remaining marinade on top of the lamb chops and spread evenly using the back of a spoon.

5. Place the chops in the oven for 35 minutes. Halfway through cooking, flip the chops over and cook the other side.

7. For the mint yogurt, mix together all the ingredients.

Serve the chops and the mint yogurt with a side of vegetables.
