Lunch Box: Warm Spinach and Chicken Quinoa Salad


Winter months are an odd one for me. All I want is comfort food but at the same time, it can be a) difficult to put that level of comfort into a lunch box and b) comfort breakfast, lunch, and dinner is pushing it a bit.

That's why I've really gotten into coming up with warming salads recently. It's light, healthy and easy to put together so it's perfect for lunch. 


This quinoa, spinach and chicken recipe is my latest venture in the kitchen.  It's also a great way to use up left overs, especially roasted vegetables and even chicken from other recipes so don't be afraid to make it your own and get thrifty!

Warm Spinach and Chicken Quinoa Salad Recipe

Ingredients

Quinoa:
120g quinoa
600ml water
30g feta cheese
10 cherry tomatoes sliced
15 olives sliced
1 handful flat leaf parsley

Chicken:
2 chicken breasts
1tbs olive oil
2tsp dijon mustard
3tsp garlic salt
1tsp chilli flakes
3 handfuls spinach leaves

1 lemon juiced
1/2 pomegranate

Method

1. In a non-stick pan, bring the quinoa to the boil in 600ml of water. Turn the heat to low and cook until the water has fully dried up and the quinoa has softened. Once cooked, remove from the heat and mix in the sliced cherry tomatoes, olives, and parsley.

2. In a separate large pan, heat the olive oil on high heat and add the diced chicken. Wait until the chicken has changed colour from pink to white and then drain any excess water left by the chicken.

3. Add the mustard, garlic salt, and chilli flakes to the chicken and the spinach. Thoroughly mix and allow the spinach to wilt and the chicken to fully cook.

4. Combine the cooked chicken with the quinoa. Add the lemon juice and pomegranate and mix well.

Garnish with feta and pomegranate.
