Cherry & Pecan Butter Flapjacks

With the festive season here, it's only fair I should share something truly sugary and delicious.

If you have seen some of my recent stories, you will know it's been food galore at my flat recently. The holiday season means family, and family always means food! I love sweet treats, and I love them even more when they are home made - they're always extra delicious.

I have to admit though, with all the office dinners, catch ups with friends, and a whole array of Christmas sandwiches in store (who would have known there are so many) I'm mince pied out!

This delicious flapjack recipe with cherries and roasted pecans has been a huge hit at mine. Buttery sugary heaven without being heavy and something a little different for the festive period.

I know for many of you, including myself, Xmas is extra busy. I've enjoyed having family around, visiting relatives, hosting dinners, and catching up with friends (plus trying to tie up things at work and wind down!) It's tricky to make the effort with food when you're tired and strapped for time.

But I love to give personal gifts, and I also love to share food and these flapjacks look completely gorgeous, keep well, and are easy to bake, making them the perfect homemade Christmas food gifts (with the right ribbon involved of-course).

Beginnings of a homemade Christmas hamper? I think so.

Cherry and Pecan Butter Flapjack with Golden Syrup Recipe (easy)

🍴   Serves: Makes 12 flapjacks

🌱 Dietary Information: Vegetarian

230 g rolled oats
175 g butter
130 g brown sugar
1 tbsp golden syrup
55 g roasted pecan nuts
90 g glazed cherries


1. Preheat your oven to  200℃ and line a 25 cm by 20 cm baking tray with greaseproof paper.

2. Melt the butter in a saucepan and pour it into a large mixing bowl. Add the rolled oats, sugar, golden syrup, and combine.

3. Slice the roasted pecan nuts and cherries in half and add to the rolled oats mixture and combine.

4. Tip the mixture into your baking tray and evenly distribute. Place your flapjacks in the oven and bake for approximately 15 minutes or until golden brown.

5. Remove the flapjacks from the oven and allow to cool before slicing.
